MANGOS is one of the favorite fruit in the Neth-Nguyen household. Summer is approaching and its never to early to have a MANGO salad! I have took the challenge Cally (whole foods cooking coach at Tanasbourne, OR location) has created. Today is the second day. 2 weeks of eatingclean–it is like spring clean for your body! Just like how your car engine needs some cleaning so does your body! Junk clogging up the system is a no go–especially when energy is needed to complete your daily goals.
Below I added the rice vinegar and balsamic vinegar according to taste. A bit of sprinkles of each is just enough to enhance the herbs and mangos. Quick side dish I made last night for dinner. Sooo refreshing!
